Low Carb Vegetables

There are tons of low carb vegetables that you can eat if you are on a low carb diet. Of course if you are dining out, it is hard to remember what is low and what is high. Just remember that the greener and leafier the plant is the lower the carb count will probably be. This isn’t 100% accurate but is a real good guideline.

The easy way to remember which vegetables have the lowest carb is that the more green and leafy it is the lower it is. A few vegetables that you think are high in carbs but really aren’t will be carrots. With their high fiber they are low carb. When you are trying to eat less carbs, vegetables are a great source of food. They generally have more fiber then most other food and really keep your carb counting way down.

Low Carb Vegetables – Leaves

Eating vegetable plant leaves gives you the least amount of carbs. Lettuce, Swiss Chard and Spinach.

Stalks and Stems

We go up a notch in carb levels with these plants. Asparagus, Cauliflower, Broccoli

Fruit

Now we are talking higher carb levels. But hey, these aren’t as high as some of the processed low-carb diet crap. We’ll have green beans, tomato, eggplant, peppers and squash.

This list has the most carbs. For low carb vegetables, you want to eat very few of these. You’ll notice that they all have roots that grow underground. potatoes, yams and sweet potatoes are in this group. It’s rather weird but carrots and radishes are low in carbs. It must be all the fiber they have is all I can figure.

  • Beets – 4.5 grams
  • Cabbage – 1.5 gram
  • Carrots – 4 grams
  • Celery – 1 gram
  • Corn – 18 grams
  • Cucumber – 2 grams
  • Green Beans – 2 grams
  • Lettuce – .3 grams
  • Peas – 8 grams
  • Potatoes 12 grams
  • Radishes – 1 gram
  • Spinach – .2 grams
  • Tomato – 2.5 grams
